Reporter Food – Filthy
Animal from Otus Supply
(Crystal A. Proxmire, Jan. 13, 2018)
Ferndale, MI – A night out with friends turned into a gluttonous feast of greasy pig jawl served on disgustingly good pizza deserving of the name “Filthy Animal.”
We did not know what “guanciale” was so we decided to order it blindly. For those who don’t know, guanciale is cured pig’s jawl or cheek.
So, that’s what we ate. Guanciale, mozzarella, Parmesan, pesto, green onion, and pine nuts on delicious wood-fired pizza dough. Guanciale is similar to bacon or pancetta, yet much more flavorful. It was hard for any of us to eat more than a piece because it was so filling.
To balance out the cheerful taste of strange and wonderful pizza, I needed a nice cold drink.
The Old Rugged Cross sounded good. It was made with Smith & Cross Rum, Ancho Reyes, lime, orange and hazelnut. My friends had wine. Maybe someday I’ll have refined enough taste buds to appreciate good wine. The cocktail was good.
I’m also kind of excited that they use the wax paper that looks like newsprint.
Otus Supply has been opened for a year now, and the venue maintains its artsy yet easy-going atmosphere and creative approach to food.
